The traditional Laguiole knife 11 cm is signed by Gilles: a solid bladestop is provided on all of our springs, that shall keep a long time the edge of the blade, the traditionnal bee is forged into the spring. These details create a unique Laguiole knife, making each knife one of a kind.

Our specialty: Personalize your knife (first name, initials, date...) with a beautiful engraving of the spring produced by a professional engraver. The engraving is performed before the file work (guillochage) and the heat treatment.
Hand chiseled and forged spring
The traditional bee is solid and forged into the spring. The spring and bee are then hand-chased with a file : This denotes artisan quality, unlike inexpensive mass market products that have welded springs and are machine decorated.
Traditional Shepherd's cross inlayed
Legend reports the shepherds of the Central Massif used their knife in the ground to pray, this cross remains a characteristic sign of the Laguiole knife.

Before the laguiole knife was the capuchadou knife, this basic knife had a fixed blade, a long drawn point and was made of thick steel. This old laguiole knife was a real tool for this people who used it in daily work: cook the meal, field work or animals care...
At this time, this first laguiole knife wasn't yet a folding knife and was handmade with rustic material.
In France, during several century, each region had his own knife, a big part of it disappeared although the laguiole knife which is become the most famous french knife in the world.
The laguiole design evolved years after years: fixed blade to folding blade, straight blade to "Yatagan" blade, bee spring and shepherd's cross, laguiole knife corkscrew and lock-back system.
Nowadays, the laguiole knife story is still evolving.
In the Fontenille Pataud workshop, our craftsmen traditionally handmade outstanding knives for several generations, as usual in the city of Thiers. Each one of our knifemakers hopes to create especially for you a sustainable product that will become your every day to carry.
We are proud to say that our knives are handed down and offered from generation to generation, such as the Laguiole traditionnal, which features a forged bee and a hand chiseled spring. Much more than knives, our Laguiole made in France are true life partners.

The "GUILLOCHE" pattern is our premium range : in addition of the classical finition, your knife will have the plates and the blade's top fully chiseled.
Handle : Stabilized poplar burl, 6 mm slabs. Traditionnal "shepherd's cross" inlay.
Blade : Stainless 12c27 swedish steel , 3 mm thick . Hardness: 56-57 Hrc.
Size and weight : 11 cm folded, 20 cm open, approx 70 grams.
Plates & bolsters: 1.2mm thick stainless steel with 2 solid bolsters. Brass is also available (see options).
Spring : The ' Bee 'spring is made from 3 mm thick stainless steel Z20c13. A solid bladestop is provided on all of our springs : That helps maintain the edge of the blade. The traditional bee is solid and forged into the spring. The whole spring (including inside) and bee are then hand-chased with a file : This denotes artisan quality, unlike inexpensive mass market products that have welded springs and are machine decorated.
