How do I care my Fontenille Pataud knife?

First and foremost, a word of caution: as our elders used to say, a knife is not washed, it is wiped. At Fontenille Pataud, we primarily use natural materials for our knife handles, such as wood and horn. It is essential never to expose these materials to water and, even more importantly, never put them in the dishwasher. These materials are naturally microporous, meaning they absorb water, swell, and then shrink as they dry, eventually leading to deformation. If your knife handle accidentally gets wet, be sure to dry it immediately and gently.

Caring for the Blade

For stainless steel blades, including Damascus steel, washing and degreasing pose no problem. However, avoid using abrasive sponges, such as "Spontex," as they can cause micro-scratches. If your blade is made of XC75 carbon steel, be sure to dry it thoroughly after washing to prevent oxidation marks from forming.

Maintaining the Handle

To keep the handle scales in optimal condition, apply a cloth lightly soaked in linseed oil once or twice a year. If you use your knife daily, the natural moisture from your hands will be sufficient to nourish the material.

Mechanism Maintenance

To ensure smooth operation, apply a drop of oil twice a year at the junction between the blade and the handle. It is crucial to use a food-safe lubricating oil.

Sharpening the Edge

A well-maintained knife retains its sharpness and efficiency. For sharpening, use a honing steel and follow these two essential tips: Sharpen your knife before the blade becomes dull. Maintain an angle of approximately 20°. The easiest method is to place the honing steel on a table for stability, then hold the blade at a 20° angle against it. Work along the entire length of the cutting edge, alternating sides. Since the honing steel's coating does the work, there is no need to apply excessive pressure.
